VINTAGE AND WINEMAKER’S NOTES: In the summer of 2015, one of my cork suppliers took me on a trip to Portugal. It was during this trip that I discovered the magic of White Port. During the harvest of 2015, while tasting our Chardonnay mid-fermentation, it occurred to me that if we could capture the aroma and flavors of this stage of the wine, it would be a transcendental experience. This resulted in an experiment in the 2016 harvest. About halfway through harvest, I combined fermenting Chardonnay juice with the brandy I had purchased for our 2016 Cabernet Sauvignon based dessert wine, Iteration. What resulted is an amazing dessert wine with honeysuckle, peach blossom and nectarine with a slightly sweet nectar flavor. Enjoy with your favorite pear tart, dried figs, or other magical creations.
